I miss making baby food. From the moment The Girl started solids, I've made all her baby food myself. She was like a little Energiser Eating Bunny - she would gobbled up whatever I put in front of her. Then again, making baby food isn't rocket science, there's really nothing much to it, just mix & match different combination of meat, fish, vegetables & then puree. I was feeding her purees like carrot & liver, salmon & zucchini, spinach & potatoes....those were her favorites.
During that time, I bought a book called The Healthy Baby Meal Planner by Annabel Karmel & it was from there that I got some really good ideas. One of them being to use corn flakes in place of bread crumbs when making nuggets.

All you need to do is to crush the corn flakes - as you can see, I use my mortar & pestle - to resemble bread crumbs (don't worry if they are not as fine). Coat bite size pieces of chicken with beaten egg & then corn flake crumbs. Fry till golden brown. Doesn't get easier than that. Freeze extras for those I'm-too-lazy days.

Your chicken nugget looks so delish I could eat it myself. It does look easy enough although I don't have cornflakes at home, and to buy it (they don't sell small packs, all big packs) - means I would have to finish up the rest of it.
And wow, I wish my girl eats as well as yours (prob because I am not as diligent as you in the making food dept).
back in germany - I don't know if the reason she eats well is because of my cooking or just that I'm lucky.
tsu lin - X loves the nuggets done that way too. In fact sometimes I use corn flakes to replace bread crumbs for other dishes. The corn flakes here comes in big packets too but I don't normally have problems finishing it. Remind me to post recipe for cornflake cookies
PLEASE DO! But I have to admit I can't bake to save my life. Also, I wouldn't know what kinda butter to buy, or even what equipment to use.
Saying that, I do really wanna try because I remember I loved this cookie too! :) Your blog makes me do things I usually don't do ;)
