Raclette

When the weather gets cold, we will take out our raclette grill. Raclette is the name of the cheese but also the name of the dish. It's excellent when you have friends over & also when you don't have a lot of time to slave in the kitchen (which is what's happening right now).

There are many ways that this is done but typically in our household, it's served with boiled potatoes that is first cooked on the stove & then kept warm on the stone grill. Then with an assortment of cold meats like ham, proscuitto, salami etc.

Just lay everything out & the party can begin. Everybody will take a portion of raclette cheese, heat it up on their individual coupelles & once that starts to bubble, scrap the raclette off the coupelles onto the potatoes & eat with the cured meats.

It's very filling & oh so warming on a cold winter day.

I like the idea of also cooking meats, vegetables & mushrooms on the grill (as they do in Germany) but have never tried that yet. Making a mental note for the next time.
